Why fresh roast?
A while back, we asked ourselves the same question.
Upon finding the answer, we'll never go back to commercial coffee! It's a simple concept, really. Once roasted, coffee should be treated no differently than any other perishable food item.
Just like loaf of bread, coffee can also stale and degrade over time. And this time frame is not measured in months or years, but days and weeks. The notion that a roasted coffee bean has properties this fleeting, has not really been considered until very recently. People mostly just saw it as a dusty brown powder that gives a jittery buzz.
How did this happen?
This attitude stems from the commodification of coffee as an agricultural product during the 20th century. Focus was put on uniformity and crop yield, rather than quality, variety, and unfortunately ethics. This birthed giant corporations, industrially growing and roasting enormous quantities of beans for the mass market just to ship as many units out as possible. The result was tinned up ground coffee, with a bland, bitter flavor that stood on supermarket shelves for months. A crying shame! No wonder so many people have to doctor their coffees with endless creams and sugars just to get it down.
However, what many people don't realize is that this experience with coffee as a sort of necessary evil, as ingrained as it is in our society, is truly the symptom of a problem. And the problem is dead, rancid coffee. Coffee not only tastes remarkably less bitter, more full bodied, and richly complex when consumed fresh, but the origin of the bean, as presented by its specific aroma and particular variety of flavor notes becomes distinguishable. Coffees from Kenya and Ethiopia, for example, will taste completely different than the coffees from Mexico or South American countries. This is due to the varying soils, climate, and coffee bean varieties. All of these subtle and not so subtle variations come to the forefront with each sip of your cup. Commercial, dead coffee just zaps this novelty right out of the bean, making it all taste quite standard and boring.
We believe coffee beans have a story that deserves to be told.
Consumers should know where they come from and how they're grown and processed, ensuring a truly vitalized product is in hand. This, for us, is the complete picture of coffee, making no sacrifices and nearing a full-on obsession with quality.

How long will my coffee stay fresh?
The National Coffee Association suggests that coffee will stay fresh for approximately two weeks after being roasted, something the giants in the coffee industry have long ignored. After two-ish weeks, the taste and aroma of the coffee will begin to drop off. The beans begin to lose the properties that made them unique and can start to taste papery, flat, or otherwise stale and unpleasant. This can be somewhat mitigated with proper storage techniques, and you can get a bit more life out of your beans if you don’t expose them to too much oxygen, light, or moisture. If you can, keep your coffee in an airtight jar, stored in a cabinet away from light.
Some roasters will rest their coffees for upwards of 3 days before even making their coffees available, but we find this “rest time” is excessive. Many coffees are fantastic right off of the roaster, and yes, some will improve slightly with a day or two of rest. We don’t believe it should be up to the roaster to keep you from trying the coffees when they are at their freshest. Part of the fun of drinking coffee - at least we think - is to see how the character and flavor of the coffee develops over its lifecycle.
